Originally from Russia and enjoyed by ancient Greeks and Romans. Tops used in salads or cooked, excellent vitamin A and C and calcium. Roots are most tender when young, leaves in stir fries.




 
Known in Europe in the Middle Ages. Plant late summer or early autumn for good development by winter. Likes soils high in organic matter. Sweetness improves with frost, so harvest after frost, can store in high humidity at low temperatures for months
